There are a lot of graphical user interfaces available for Linux, and Ubuntu bundles some of them. And there are a lot of text editos (like Sublime)
In command line you could use some command line editor like "vim" or "nano" or "emacs" or "F4" in Midnight Commander.
But I believe you need to read some books or tutorials about Ubuntu before.
